Marta is a Tenured Scientist at the Institute of Food Science Research. Her research focuses on the structural characterization of biomass and its correlation with techno-functional properties, aiming to develop strategies for a more efficient use of natural resources in food systems. In particular, she has extensive experience on the valorisation of marine biomass to develop functional food ingredients and bio-based packaging materials. She has authored more than 100 scientific publications, led multiple national and international projects and worked at leading international institutions.
