Saioa Alvarez‑Sabatel is a PhD researcher at the New Foods Department at AZTI, specialising in food structure design. She leads and contributes to R&D projects focused on healthy food reformulation through the application of ingredient functional properties and food processing technologies. Her work also addresses sustainability‑driven innovation and the digitalisation of the food industry through data‑enabled, industry‑oriented projects, supporting the transition towards healthier, more sustainable and competitive food systems.
