STAR-MEALS is a space gastronomy project from Yamagata University that explores how food can be preserved, prepared, experienced, and circulated in the space era. This talk introduces a future food system combining COOLD FOOD technology, 3D/4D food printing, texture-analysis AI, and digital restaurant systems. It will also present a roadmap from ground demonstrations at Tengendai Alpine Lab and urban test sites to future space dining using a Gastronomy Pod connected to a space station. Through STAR-MEALS, we aim to redesign eating for both Earth and space, creating new food experiences that support health, joy, sustainability, and human connection
